Citric Acid

Citric Acid is the most widely used food acidulant, adding tartness and preserving flavour in beverages, confectionery and processed foods, in anhydrous and monohydrate forms.

Citric acid is produced by fermenting sugars with Aspergillus niger, then purified and crystallised. It gives a clean, fresh sourness, lowers pH to help preserve foods, and binds trace metals that would otherwise catalyse rancidity and discolouration. It is approved as food additive E330 almost everywhere.

It comes in two forms. Anhydrous citric acid contains no water of crystallisation and is preferred in dry mixes, powdered drinks and effervescent tablets, where moisture would cause caking or reaction. Monohydrate contains about 8.5% water and is widely used in liquid applications. Both are offered in several mesh sizes.

Citric Acid — frequently asked

Anhydrous citric acid has no crystal water and is preferred for dry mixes, powdered drinks and effervescent tablets. Citric acid monohydrate contains about 8.5% water and is commonly used in liquid foods and beverages, where the water makes no difference.

Commercial citric acid is produced by fermenting sugars such as corn or cane sugar with the mould Aspergillus niger, then purifying and crystallising it.

Coarse grades (8–30 mesh) flow well and cake less. Finer grades (30–100 mesh) dissolve faster and blend more evenly in dry mixes. Fine powder is used where very fast dissolution is needed.
