Potassium Sorbate

Potassium Sorbate is a food preservative that inhibits moulds and yeasts in cheese, bakery, beverages, wine and dried fruit.

Potassium sorbate (E202) is the potassium salt of sorbic acid. It is very effective against moulds and yeasts and has a neutral taste at normal use levels. It works best below about pH 6.5, so it remains effective in some foods that are too close to neutral for sodium benzoate.

It is widely used in cheese, baked goods, fillings, beverages, wine (alongside sulphur dioxide) and dried fruit. It has little effect on bacteria, so it is combined with other hurdles where bacterial spoilage matters. Granular and bead forms flow well and produce little dust.

Potassium Sorbate — frequently asked

Potassium sorbate is particularly effective against moulds and yeasts and works up to about pH 6.5. Sodium benzoate is effective mainly below pH 4.5. They are often used together in acidic drinks and sauces.

Potassium sorbate is typically used at 0.025–0.1%, within the maximum levels set by local food regulations for each food category.

Potassium sorbate has limited antibacterial action. It is mainly a mould and yeast inhibitor, so other measures such as acidity, salt or refrigeration are used to control bacteria.
