Food phosphates

Food phosphates — sodium tripolyphosphate (STPP) and sodium hexametaphosphate (SHMP) — retain moisture in seafood and meat and act as sequestrants in food and beverages.

Sodium tripolyphosphate (STPP, E451) is used mainly in seafood and meat processing, where it holds water, improves texture and reduces drip loss. It is also used in processed cheese and some bakery applications. Sodium hexametaphosphate (SHMP, E452) is a strong sequestrant that binds calcium and other metal ions, stabilising beverages, dairy products and processed foods.

Food grades are produced to tight limits on fluoride, arsenic and heavy metals. Technical grades of the same phosphates are used in detergents, water treatment and ceramics. Food use levels are limited by regulation, so dosing is set per product and market.
