Sodium Citrate

Sodium Citrate (trisodium citrate) is a food buffer and emulsifying salt used in beverages, processed cheese and pharmaceuticals, and as a phosphate-free detergent builder.

Sodium citrate is the sodium salt of citric acid, supplied mainly as the dihydrate (CAS 6132-04-3), with anhydrous material (CAS 68-04-2) available on request. It has a mild, salty-sour taste and buffers pH, which smooths the flavour of soft drinks and stabilises acidity in foods (E331).

In processed cheese it acts as an emulsifying salt that lets cheese melt smoothly without separating. Pharmaceutical grades are used in oral rehydration salts and as an anticoagulant. Technical grades replace phosphates in detergents because they soften water and biodegrade readily.

Sodium Citrate — frequently asked

Sodium citrate acts as an emulsifying salt: it binds calcium in the cheese proteins so they disperse, letting the cheese melt smoothly without the fat separating.

Citric acid is sour and lowers pH. Sodium citrate is its salt, which tastes mildly salty-sour and buffers pH. They are often used together to set and stabilise acidity.

Yes. Sodium citrate binds calcium and magnesium, softening water, and is readily biodegradable, so it is used as a phosphate-free builder in laundry and dishwashing detergents.
