CAS 532-32-1
Sodium Benzoate
Sodium Benzoate is a widely used preservative against yeasts, moulds and bacteria in acidic foods and drinks such as soft drinks, sauces and pickles.
Sodium benzoate (E211) works through undissociated benzoic acid, which forms in acidic conditions and inhibits microbial growth. It is most effective below pH 4.5, which makes it ideal for soft drinks, fruit juices, sauces, pickles, jams and salad dressings.
It is inexpensive, dissolves easily and is usually used at 0.05–0.1%, within limits set by each country's food regulations. Formulators avoid combining it with ascorbic acid in drinks exposed to heat and light, which can form trace benzene. Dust-free extruded and granular forms are available.

Sodium Benzoate — frequently asked
Sodium benzoate is effective mainly below pH 4.5, where enough undissociated benzoic acid forms to inhibit yeasts, moulds and bacteria. Above pH 5 it is much less effective.
Typical use is 0.05–0.1%. The maximum is set by local food regulations — for example, the EU allows up to 150 mg/L in many soft drinks.
In the presence of ascorbic acid, heat and light, trace benzene can form in beverages. Manufacturers manage this by reformulating, controlling storage conditions or using alternative preservatives.
